After the last diner, before the first coffee

An establishment that closes at 11 p.m. and reopens at 7 a.m. leaves eight hours. Here's how we use them, for a restaurant that entrusts us with daily cleaning.

  1. At closing

    Relay

    • Point with the manager
    • Checking turned off and cooled equipment
  2. First hour

    Kitchen

    • Stainless steel tops and sinks
    • Exterior of equipment
    • Hood filters removed if provided
  3. Second hour

    Kitchen floors

    • Degreasing and scraping
    • Siphons emptied and rinsed
    • Garbage room
  4. Afterwards

    Dining area and bar

    • Tables and seats
    • Counter
    • Floors and entrance
  5. Before leaving

    Sanitary

    • Complete cleaning, restocking
    • Signed pass sheet
    • Closure and alarm

The actual times and duration are fixed at the time of the visit, depending on the surface area and number of seats.

Two ways to work with you

You can leave the cooking to us every night, or keep the day-to-day in-house and call us for basic cleaning. The two hold each other.

After each service
The team arrives at closing time and makes the kitchen and room ready for the next day.
Weekly reinforcement
One in-depth visit per week, on closing day: everything the brigade doesn't have time to do.
Deep interior clean
Before a reopening, after work, before an inspection.

How does an cleaning visit take place?

  1. Handover with your team

At closing, the chef or room manager points out what requires special attention. Two minutes, no more.

  2. The kitchen first

From top to bottom, from clean to dirty: surfaces, equipment, walls, then floors and drains. Products compatible with food contact on anything that touches food.

  3. Dining area, bar and toilets

Material and microfibre cloths distinct from those in the kitchen. Nothing moves from one area to another.

  4. Signed form

Each visit is recorded on your cleaning plan: date, time, areas done, name of the worker. This is the document you present in the event of an inspection.

Frequently asked questions

All questions
Does your cleaning visit comply with HACCP hygiene rules?

We follow your cleaning and disinfection plan, with products suitable for food contact, and we record each visit. Responsibility for the HACCP plan remains that of the operator; we do not issue certification.

Do you clean the hoods?

We clean the filters and the exterior of the hoods. The degreasing of extraction ducts must be entrusted to a specialized company, which issues the certificate requested by your insurer.

Can you come every evening, including weekends?

Yes, on the days your establishment is open, including weekends. The schedule follows your days of service, not the office calendar.

Who is coming, and what happens if that person is absent?

An assigned team, presented to your manager before the first visit. The replacement has already worked on site in pairs: he knows where the siphons, the products and the alarm are.

Do you also work for hotels?

Yes: common areas, breakfast rooms, kitchens and toilets. Room cleaning is possible and costs separately.

Let's talk about your kitchen.

Surface area, number of services, opening days: we come and see on site before calculating the figures.
